Chicken Crispy Fried

Ingredients

4 chicken maryland or 8 drum sticks
4 cloves garlic, chopped
3 coriander roots, finely chopped
2 tsp ground turmeric
1 tsp freshly ground pepper
1 tsp salt
1tsp caster sugar
2 tb sp chili sauce, optional.

Method

Boil the chicken in a pan of water for 15 minutes or until it is cooked through,
allow to cool completely.

Combine the garlic , coriander root, turmeric, pepper , salt, sugar and chili sauce
in a mortar and pestle or small bowl food processor. Grind or process until the
mixture is smooth.

Brush paste over chicken, cover, refrigerate for 30 minutes. Heat some oil in
a heavy based pan, add chicken and cook until dark brown, turning frequently.
Drain on paper towels.
