Red Curry Pork

with Corn and Peas

Ingredients

1 tb sp oil
1-2 tb sp Red Curry paste
500 lean diced pork
1 cup coconut milk
1 cup water
1 cup fresh corn kernels
or 150g baby corn spears
1/2 cup fresh green peas
1 tb sp fish sauce
2 tsp soft brown sugar
2tsp finely grated lime rind
1/2 cup shredded fresh basil leaves.

Method

Heat oil in a wok or heavy based pan. Add the curry paste to the wok and stir
for 1 minute. Add the pork and stir fry for 1 minute. Add the pork and
stir fry, tossing constantly, until the pork brown slightly.

Add the coconut milk to the wok and bring to the boil. Simmer, uncovered
for 15 minutes.

Add the corn and peas to the wok, cook for 5 minutes. Add the fish sauce,
brown sugar, lime rind and basil, toss. Garnish with basil leaves, if you like.

Serve with steamed rice.
