Char Grilled Baby Octopus

Ingredients

500g baby octopus
2tbsp oil
3 cloves garlic, chopped
1 tb sp green or pink peppercorns
2-4 red chilies, finely chopped
1 tb sp fish sauce.

Method

To clean the octopus, use a small sharp knife to remove the gut by either
cutting off the head entirely or by slicing open the head and removing the gut.

Pick up the body and use the index finger to push up the beak. Remove the
beak and discard. Clean the octopus thoroughly. Cut the head into 2 or 3 pieces.
Place the clean octopus in a shallow dish.

Combine the octopus , oil, garlic, peppercorns and chilies in a bowl, marinate
for 30 minutes. Heat a Bar-Bar-Q plate or cast iron pan until very hot.
Cook 3 octopus at a time, turning frequently, for 3 minutes or until they
turn white. Do not over cook. Sprinkle the fish sauce over the top and serve immediately.

These are particularly delicious served with a squeeze of lime. If you wish,
you can garnish with a sprig of fresh coriander or some slices of fresh chilies.
