Stuffed Zucchini

Ingredients
4 large zucchini
125g pork mince
50g peeled raw prawns, finely chopped
2 cloves garlic, crushed
2 tb sp fresh coriander, finely chopped
1/2 tsp sugar
2 kefir lime leaves, finely chopped or 1 tsp grated lime rind
2 shallots, finely chopped
3 tb sp coconut cream
2 tsp fish sauce
1 tb sp roasted unsalted peanuts, finely chopped.
Method
Cut the zucchini into 4cm thick slices. Using a melon baller, scoop out the
center leaving about 5mm of flesh around the inside of the skin and on the
bottom of each side. In a small bowl, combine the pork mince, chopped prawns,
garlic, coriander, sugar, kaffir lime leaves, shallots, 2tbsp of the coconut
cream and the fish sauce.
Spoon the mince mixture into the zucchini shells, cover and refrigerate
until close to serving time.
Place the stuffed zucchini in the top half of a steamer or a bamboo steamer.
Cover and steam for 10 minutes or until cooked and zucchini are just tender.
Serve the zucchini dotted with a little of the remaining coconut cream and
sprinkle with chopped peanuts.
