Red Cabbage Salad

Ingredients

1 medium onion, finely sliced
1 tsp salt
2 tsp dried shrimp
1/4 cup hot water
1 tb sp oil
6 cloves garlic sliced
2 cups finely shredded red cabbage
2 cups finely finely shredded Chinese cabbage or curly white cabbage
1/4 cup roasted unsalted peanuts, chopped

Dressing

2 tsp soft brown sugar
2 tb sp lime juice
1/2 tsp cracked black pepper corns
2 tb sp chopped fresh coriander leaves and stems
3 cloves garlic, crushed
1 tb sp fish sauce

Method

Combine the slices onion and salt in a colander. Set aside for 30 minutes, rince and drain well. Meanwhile, place the shrimp in a heat proof bowl, cover with the hot water and soak for 15 minutes, drain and chop finely.

Heat the oil in a pan. Add the garlic and fry until browned and crisp, drain on paper towels.

To make Dressing: Place the sugar, lime juice, pepper corns, coriander, crushed garlic and fist sauce in a blender and blend until smooth.

Combine the onion, shrimp and half the fried garlic with the shredded cabbages, in a large bowl. Pour the dressing over the top and mix well. Serve sprinkled with peanuts. Garnish the salad with a sprig of fresh coriander, if you wish.
