Green Pawpaw and Peanut Salad

Ingredients 50g dried shrimp
100g green beans, cut into short pieces
1 medium lettuce
1/2 medium green pawpaw, peeled and grated
1/4 cup lime juice
2 tb sp fish sauce
2 tsp soft brown sugar
1-2 tsp chopped fresh red chilies
1/2 cup roasted peanuts, chopped
1 red chilies , finely diced
Method Pound the dried shrimp in a mortar and pestle or finely chop.
Cook the beans in a pan of boiling water for 2 minutes. Drain and then plunge into
iced water, drain again. Shred the lettuce and arrange on a serving plate.
Top with the beans, shrimp mixture and pawpaw.
Combine the lime juice, fish sauce brown sugar and chilies in a small bowl, mix well. Pour over the salad and spread peanuts and chilies over the top.
Note: green pawpaw and dried shrimp are available at Asian food specialty stores-- There are no substitutes.
