Vegetable Curry

Ingredients

100g snake beans
1 tb sp oil
1 medium onion, finely chopped
1-2 tb sp Green Curry past
1+1.2 cups coconut milk
1 cup water
1 medium red capsicum, cut into strips
150g broccoli, cut into florets
4 kaffir lime leaves
2 medium zucchini, sliced
2 cup shredded cabbage
2 tb sp fish sauce
2 tb sp lime juice
2 tsp soft brown sugar

Method

Cut snake beans into short lengths. Heat the oil in a large wok or frying pan.
Add onion and curry paste to wok, cook for 3 minutes over medium heat, stirring.
Add coconut milk and water, bring to the boil. Stir, reduce heat and simmer,
uncovered for 5 minutes.

Add snake beans, capsicum, broccoli and kaffir lime leaves to the wok. Cook uncovered for 5 minutes. Add the zucchini and cabbage to the wok, cook for
3 minutes or until softened.

Add fish sauce, lime juice and rind and brown sugar, toss.
