Prawn and Fruit Salad

Ingredients 150g cooked small prawns
1/2 green pawpaw
1 large green apple
1 firm green pear
100g green or dark grapes
2 tb sp crisp fried spring onion
1 tb sp crisp fried garlic
1/4 cup fresh coriander leaves
Dressing 1/4 cup lime juice
2 tsp grated lime rind
1 tb sp fish sauce
2 tsp soft brown sugar
1-2 tsp chopped fresh red or green chilies
Method Peel the prawns, set aside. Peel the pawpaw, remove the seeds and cut flesh into cubes. Chop the apple and pear.
Peel and core the pineapple, chop the flesh into bite size pieces.
Combine all the fruit with the prawns in a chilled serving bowl.
To make Dressing: In a small bowl, combine the lime juice and rind, fish sauce, sugar and chilies. Pour the dressing over the combined fruit and prawns, toss well. Scatter spring onions, garlic and some coriander leaves over the top just before serving.
